Vegetable Soup with Cheeseballs

Ingredients
1 medium-sized zucchini (do not peel)
2 big peeled potatoes
3 medium-sized peeled carrots
1 big onion
2 celery branches
4 ½ cup boiling water (1 L)
2 teaspoons salt (10 ml)
¼ teaspoon pepper (1 ml)
½ teaspoon basil (2 ml)
2 tablespoons butter (30 ml)
½ cup milk (125 ml)
Cheeseballs
:
1 egg
½ cup
Liberté Quark cheese
or
Liberté cottage cheese
(125 g)
½ cup water (125 ml)
½ teaspoon salt (2 ml)
1 ¼ cups flour (300 ml)
Preparation
Grate vegetables in a 4L saucepan.
Add boiling water, seasonings and butter.
Cover and simmer for 15 to 20 minutes, until vegetables are tender.
Cheeseballs
:
Mix all the ingredients with blender until creamy.
Teaspoon by teaspoon, put the mixture in the simmering soup.
Cover and let simmer for 15 minutes.
Add ½ cup of Liberté organic milk and complete seasoning.
